Job Summary Under minimal supervision, applies proficiency in all areas of culinary services and relies on experience and judgment to plan and accomplish assigned goals. Prepares and cooks standard or specialty food items. Is responsible for set-up and sanitation of cooking areas. Performs work in accordance with Institute and regulatory agencies safety standards and practices, and performs all job duties to ACF Culinarian standards. May coordinate culinary efforts of various cooking operating within the kitchen and/or dining facility.
Candidates for this position are expected to actively pursue ACF Culinarian certification.
Job Duties - Performs full array of cooking skills as required for main dishes and side orders - Required to have and maintain a minimum Culinarian ACF certification - Prepares and cooks meats, fish, vegetables, gravies, sauces, cereal, soups, fruits, bakery products and other foods according to recipes or member orders - Cooks from scratch or makes substitutions as requested - Cleans and sanitizes work areas and equipment according to protocol; deep-cleans equipment and work areas per schedule - Coordinates food preparation during services period and checks the quality and presentation of dishes being delivered to customers - Ensures that all kitchen equipment is in proper working condition and that health and sanitation standards are met - Informs the Chefs in the event equipment is not in proper working order - Assists in maintaining timely service for meals and events - Provides leadership to other staff to ensure that all food is prepared according to recipes and menu - Assists in training new cooks and kitchen staff - Responsible for correct food handling that results in proper food cost - Performs other related duties and responsibilities as required or assigned - Cultivates a positive and productive workplace through communication, vision, teamwork and commitment; reinforcing Dining Services values and beliefs through words and actions - Assists with ensuring employee work areas are ready for servicing customers; coordinate support staff covering workstations - Assists in coordinating culinary services for meal periods as well as private functions and special events - Responsible for maintaining all CDS standards and procedures - Other duties as assigned
Basic Qualifications - Able to read and write well in English - Able to take direction and absorb information quickly - Able to work as a member of a team - Ability to obtain a ServSafe certification - Ability to lift a minimum of 50 lbs. of kitchen supplies - If employment is secured, ability and desire to obtain certification from the ACF
Preferred Qualifications - High School Diploma or equivalent - 2+ years working in a successful team environment
