Job Summary: The Stewarding Supervisor is responsible for managing and directing stewarding operations that include dish room operation, equipment maintenance, facilities maintenance, management of stewards, (both in-house and contracted), maintenance of all china, glass and silverware. The successful candidate will be responsible for assisting in enforcing the highest possible cleanliness and hygiene standards in all food processing facilities, as well as the operating equipment. Main responsibilities include dish-room operations, equipment cleaning, kitchen area cleaning and equipment maintenance, banquet plating and food running. Reports to Executive Chef.
Job Duties: - Manage all stewarding operations to include inventory management, maintenance of sanitation and cleanliness standards, systems management, health inspections, safety initiatives, report generation, department management, meeting participation and facilitation, implementation of policies and procedures and cost controls - Lead staff in daily coordination and distribution of china, glassware and silver - Oversee equipment storage and distribution according to established standards - Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, scheduling, conducting counseling and evaluations and delivering recognition and reward - Ensure compliance with health, safety and sanitation awareness standards and prepare for health inspections - Supervise the duties of all stewarding department employees, facilities, operations and costs - Supervise the sanitation, cleanliness, hygiene as well as the quality level of product and services - Ensure back of house areas are maintained to the highest cleanliness standards and cleaning schedules are followed and completed - Direct and assist stewards in order to make clean up more efficient - Ensure water temperature, quality and chemical levels are appropriate for cleaning and documented - Assist with Banquet plate-ups and buffet by transporting and ensuring adequate stock - Check more specifically the proper use of chemicals and washing accessories - Coordinate with the Food & Beverage Team and Sous Chefs to check their requirements for the day and the next day - Assist in the location, movement and storage of banquet operational equipment - Work closely with the Chef, Banquets Manager to anticipate guest needs - Work with all departments to ensure items that are required for service are available when needed - Take all necessary actions to reduce the loss of silverware / flatware - Take all necessary actions to reduce breakage of China and Glasswares - Supervise employee's ability to follow loss prevention policies to prevent accidents and control costs - Enforce proper cleaning routines for service ware, equipment, floors, etc. - Enforce proper use and cleaning of all dish room machinery - Ensure pots and pans are cleaned and sanitized correctly - Ensure all food holding and transport equipment is in working order - Ensure compliance with food handling and sanitation standards - Ensure stewarding staff have supplies, equipment, tools, and uniforms necessary to do their jobs - Assist in preparing a quarterly China, Glass and Silverware inventory and reports losses - Lead and manage the Stewarding team in all aspects of the department and ensure standards are followed - Ensure disciplinary procedures and documentation are completed according to Standard Operating Procedures - Encourage and build mutual trust, respect, and cooperation among team members - Performother duties as required to perform job
Basic Qualifications: -3 or moreyears of related experience or an equivalent combination of education and experience - Experience in a high volume restaurant/hotel or club operation as a Stewarding Supervisor - California Food Manager ServSafe Certification or ability to obtain within 30 days of employment - Must be able to lift at least 50 lbs.
